Spinach-and-Artichoke Dip


Another week has gone by, and this week's challenge was an appetizer. We had Spinach-and-Artichoke Dip. I wouldn't really recommend the recipe I used, but still wanted to put the post on this blog for my own record-keeping sake.

The let down is due to that fat-free stuff. If you are ever in Ft. Collins, Colorado, try out the s&a dip at Coopersmiths with celery & carrots. And their Red Feather chicken. These have fueled many a dissertation! (Plus they brew their own beer. DDAD.) - BBS

Normally I am not a low-fat or fat-free kind of cook, but this recipe didn't call for mayo and it got five stars, so I decided on it. But you're right, BBS. The fat is a necessity when it comes to dips like this. You've encouraged me; maybe I will try another recipe for the dip someday. Plus, I'll keep Coppersmiths in mind if I'm in Ft. Collins.
